What You’ll Need for This Recipe
Apples of course! For this recipe, you will be grating one large apple (or 1 cup) and chopping 1/2 of an apple. The apple chunks are to sprinkle on the batter while cooking.
Eggs We are using three eggs in this recipe.
Gluten Free All Purpose Flour I used Bob’s Red Mill Baking Flour.
Maple Syrup Just a bit for subtle sweetness!
Plant Milk I used almond.
Spices Cinnamon, ginger, and nutmeg.
Vanilla A must-have flavor enhancer.
Baking Powder For the fluffy pancake rise.
Olive Oil Just a bit for moisture!
How to make apple spice pancakes
Step 1
Have your pancake pan preheating. You will want the temperature to be pretty high to make pancakes. Then, measure out all of your ingredients. Grate and chop your apples.
Step 2
Whisk eggs, vanilla, maple syrup, olive oil, almond milk, and spices together until fully combined.
Step 3
Add your flour and baking powder to the mixture.
Step 4
Once everything is mixed evenly, fold in your grated apples until fully combined.
Step 5
Butter or spray your pan. If butter immediately turns brown or sizzles aggressively, the pan is just a little too hot. Once the pan is hot, but not hot enough to burn your pancakes, spoon out your batter. Sprinkle the chopped apples on top and cook.
Step 6
When the pancakes appear mostly cooked, then flip them. Cook for about another minute.

Ingredients
- 1 medium apple grated
- 1 medium apple chopped
- 1 cup GF All Purpose Flour
- ½ cup plant milk I use almond
- 3 eggs
- 1 tbsp maple syrup
- 2 tsp vanilla
- 1 tsp baking powder
- 1 tbsp cinnamon
- ½ tsp ginger
- ¼ tsp nutmeg
- 1 tbsp olive oil
Instructions
- Preheat pan on low heat while you make the batter.
- Grate one apple and chop the other. Set aside.
- In a small bowl, whisk together your flour, baking powder, and spices. Set aside.
- Whisk eggs, vanilla, maple syrup, olive oil, almond milk, and spices together until fully combined.
- Add your dry ingredients and mix.
- Fold in the shredded apples until the mixture is even.
- Butter or oil your pan. Start pouring batter.
- Sprinkle chopped apples into the batter once it is on the pan. When you can see the batter almost cooking through, flip. Cook for 1 more minute on this side.
- Top with your favorite toppings and serve warm. Enjoy!
