Made with arugula, chickpeas, avocado, cucumbers, and of course, oranges! Get into the spring and summer mood by enjoying the sweet taste of a citrus salad!
Dressing: Orange Vinaigrette
Using fresh squeezed orange, orange zest, and a few other complimentary ingredients, we are topping this salad with a sweet and tangy orange vinaigrette!
What You Will Need
FOR SALAD
- orange
- arugula
- cucumber
- avocado
- chickpeas
FOR DRESSING
- orange zest
- orange juice
- olive oil
- onion
- vinegar
- honey
- dijon mustard
- salt & pepper
Recipe Notes
- Feel free to add another protein like chicken, fish, etc. to make this more filling.
- The more ripe your orange, the better the vinaigrette will taste! If the juice is not very sweet, you can just add more honey.
- You can replace the orange slices with any type of citrus you like. I recommend grapefruit.
- This salad will keep better in the fridge if you only use dressing on the portion you are eating. Just keep it in a jar alongside the salad in the fridge.

Bursting With Citrus Salad
Taste the flavors of spring and summer with this delicious citrus salad!
Ingredients
Salad
- 1 package arugula
- 4 mini cucumbers
- 2 avocados
- 2 oranges slice one and a half, use the rest for juice
- 1 can chickpeas
Orange Vinaigrette
- 2 tbsp apple cider vinegar
- ¼ cup olive oil
- 3 tsp orange zest
- ⅓ cup fresh orange juice
- 1 tbsp dijon mustard
- 1 clove garlic minced
- ¼ onion minced
- salt & pepper
Instructions
- Wash and prepare arugula, cucumbers, avocado, and oranges.
Make the Vinaigrette
- Mince onion and garlic and add to a bowl.
- Zest an orange until you get the correct amount. Juice one half of the orange.
- Add the rest to the ingredients to the bowl and whisk thoroughly.
Assemble the Salad
- Add arugula, cucumbers, avocado, chickpeas, and orange slices to a bowl.
- Top with vinaigrette and serve!
