Mediterranean quinoa salad recipe is a fresh bite for a healthy lunch or dinner!

In this salad, we are using standard ingredients of a mediterranean dish such as cucumbers, tomatoes, onions and feta. To increase the flavor, we are roasting chickpeas, using pickled onions, and making our own greek yogurt mixture as a dressing/ side.
How to make a mediterranean quinoa salad
This recipe is so simple! There is minimal cooking and the rest is just assembly. Roast the chickpeas and cook the quinoa and you’re almost done! This recipe serves two.
INGREDIENTS
1 can chickpeas
1 1/2 cups cooked quinoa (1/2 cup dry)
1 large cucumber
3/4 cup cherry tomatoes
4 oz feta cheese
1/4-1/2 cup pickled onions (depending on your preference)
3/4 cup plain greek yogurt
1/4 cup olive oil
2 cloves garlic
3 tsp dill chopped or 1 tsp dried
1 tbsp white wine vinegar (or lemon juice)
1 tbsp honey
salt & pepper
paprika, salt, pepper, garlic powder (for chickpeas)
INSTRUCTIONS
- Prepare quinoa. Boil 1 cup of water and 1/2 cup of quinoa. Once boiling, reduce heat to simmer, cover, and let the quinoa absorb all of the water. This takes around 15 minutes.
- Once you have the quinoa started, season the chickpeas and roast them in the oven at 425 degrees for 20 minutes.
- Wash and chop tomatoes and cucumber.
- Make the yogurt mixture. Add greek yogurt, olive oil, grated garlic, dill, white wine vinegar, salt, and pepper to a bowl and mix until combined.
- Add all of the ingredients to a bowl and enjoy!
Mediterranean Quinoa Salad
Ingredients
- 1 can chickpeas
- ½ cup uncooked quinoa this will become ¾ cup cooked
- ¾ cup cherry tomatoes
- ¾ cup sliced cucumbers
- ¼-½ cup pickled onions
- ½ cup feta cheese crumbled
- paprika, garlic powder, salt, and pepper for roasting the chickpeas
Dressing
- ½ cup plain greek yogurt
- 2 tbsp white wine vinegar
- ¼ cup olive oil
- 2 cloves garlic grated
- 1 tbsp honey
- 3 tsp fresh dill or 1 tsp dried
- salt & pepper
Instructions
- First, prepare quinoa by adding it to a pot with double the amount of water. Let that come to a boil. Once boiling, reduce to a simmer and let the quinoa absorb all of the water. This should take about 15 minutes and you should be stirring occasionally throughout.
- While the quinoa is going, oil and season your chickpeas. Bake these at 425℉ for 20 minutes.
- Prepare veggies. Wash and cut cucumber and tomatoes.
- Make the dressing. Add all the ingredients to a bowl and mix until completely combined.
- Now, you just have to put it all into a bowl. Serve and enjoy!
