The flavors going on in these spicy peanut noodles make it hard to believe that they are this quick and easy to make. This recipe takes less than 20 minutes and is all about the sauce. Learn how to make this delicious dish!
Spicy Peanut Noodles Ingredients
Rice Noodles– Because all of my recipes are gluten free, rice noodles are the perfect choice here. You can use either brown or white rice noodles. You can really use any type of pasta or noodle and you will still love them!
Peanut Butter– The next obvious ingredient. Using the perfect amount of peanut butter here gives the sauce the most indulgent nutty flavor.
Coconut Aminos– If you are not gluten free, you can use soy sauce here! If you are gluten free but not avoiding soy, you can use Tamari. Coconut aminos can be a tad sweeter than soy sauce so if you need to adjust the amount of sugar, go for it!
Sriracha– The primary source of that delicious spice.
Sesame Oil– This is a major flavor enhancer for these noodles!
Lime Juice– For that acidity! You can also use rice vinegar
Hot Water– To thin the sauce. Hot water will make for a more cohesive mixture.
Coconut Sugar- Just a bit for a hint of sweetness.
Fresh Garlic and Ginger– Grating both of these fresh ingredients makes for the deepest flavor here.
Red Pepper Flakes– Another spice enhancer. Save some for topping!
Green Onion– The perfect garnish.
How to make peanut noodles
Start by getting your water ready for cooking the noodles. You can turn the stove on medium or low so that once you have finished the sauce, the water will come to a boil quickly once turned to high.
Make the sauce. Simply add all of your ingredients to a bowl, saving the hot water for last.
Once your sauce is ready, raise the temperature of the water so that it comes to a boil. Continue to cook your noodles according to the package instructions.
Rinse your noodles once they are cooked, and add the sauce.
Garnish with more red pepper, green onions, sesame seeds, sriracha drizzle, and even try more peanuts!
Recipe variations
You can substitute coconut aminos for soy sauce or tamari.
Instead of coconut sugar you can use maple syrup for more flavor, or even regular table sugar if that is what you have.
Lime juice can be substituted for rice vinegar. If you are doing this, start by using half the amount of rice vinegar and taste it before adding more.
Any noodles work for this recipe. Udon noodles are a popular choice if not using rice noodles.
Add protein! A simple grilled or baked chicken is the perfect addition here to get more protein. Tofu is also perfect if you’d like to keep it vegetarian.
Spicy Peanut Noodles
Ingredients
- ½ cup creamy peanut butter
- 1 tbsp lime juice
- 3 tbsp coconut aminos you can also use soy sauce or tamari
- 1 tbsp sesame oil
- 1 tbsp coconut sugar or maple syrup
- 1 tbsp sriracha
- 2 cloves grated garlic
- 1 tsp grated ginger
- ⅔ cup hot water
- ½ tsp red pepper flakes plus more for garnish
- green onions for garnish
Instructions
- Put the water on the stove over low to medium heat. This way, the water can be set to high and quickly come to a boil by the time you are finished making the sauce.
- Grate your ginger and garlic, and slice up a green onion.
- Add all the ingredients except for the hot water and green onion to a bowl and whisk until combined.
- Add the hot water to bring everything together.
- Turn your stove up and bring the water to a boil. Cook your noodles according to the package instructions and rinse when they are done.
- Simply add your sauce to the noodles, garnish with more red pepper flakes, green onion, and whatever else you like. Common garnishes are also sesame seeds, more sriracha, and of course, peanuts!
- Serve and enjoy!
