Peaches are commonly used in dessert, paired with spices like cinnamon, cloves, or cardamom. But did you know that peaches make for the perfect savory dish? This can be accomplished by incorporating fresh herbs like basil, dill, parsley, mint, thyme, and cilantro. In my recipe today, we are only using basil, dill, and parsley.
How to make peach salad
This is seriously the simplest recipe you can make. The flavors here really depend on the quality of ingredients, because its the natural flavors that shine. Make sure your peaches are in season and ripe. The herbs you use must be fresh and not dried! Use a high quality olive oil and feta cheese for best results as well. Once you have optimal ingredients, the only other things to do are chop and assemble!

- ripe peaches, about 3
- chopped dill, basil, and parsley, about 1/4 cup each
- about 1/4 of a medium red onion
- about 4oz feta cheese
- 1/4 cup olive oil
- 2 tbsp white wine vinegar

This salad is the definition of fresh and flavorful. Each ingredient is thoughtfully considered here. I wanted to make a recipe where I didn’t have to add a bunch of extra ingredients. Instead, I picked certain whole foods where the natural flavors would combine to create palatable complexity.
You get the sweetness from the peaches, the tang from the vinegar and feta. There is earthiness from the herbs and richness from the olive oil. Black pepper and a sprinkle of coarse sea salt top it off!

Ingredients
- 3 peaches
- ¼ medium red onion
- 4 oz feta cheese
- 4-5 basil leaves
- ¼ cup dill
- ¼ cup parsley
- ¼ cup olive oil
- 2 tbsp white wine vinegar
- Salt & Pepper
Instructions
- Prepare and chop peaches, onion, herbs, and feta.
- Combine everything into a bowl.
- Top with olive oil, white wine vinegar, salt, and pepper.
